Innovation and research
While maintaining a family-run, artisanal feel, our company has chosen to focus on innovation as a guarantee of quality. The olives are pressed immediately after harvest, preserving their freshness and avoiding long waiting times or transportation that could compromise their quality.
Each stage is meticulously managed: from storage in ventilated bins that keep the olives fresh, to dry cleaning that carefully removes stones, leaves, and soil, to washing with constantly renewed water and air drying.
The heart of the process is the variable-speed knife crusher, which allows for 52 different processing modes in real time , adapting to the cultivar type, the condition of the olives, and climatic conditions. Processing maintains a temperature of just 2°C, with nitrogen injection to minimize oxidation. The vertical, controlled malaxation allows for true cold extraction: temperatures always below 27°C, short processing times, and nitrogen saturation. Immediate filtration and rapid bottling protect the oil from any risk of alteration.
Innovation, however, doesn't stop at the mill. In our fields, we experiment with next-generation natural fertilizers and low-impact pest control protocols, closely aligned with organic principles, to respect the plant and the soil without sacrificing quality. We're also in the process of planting new native cultivars, selected both for their sensory qualities and their ability to produce oils with a unique and still little-known flavor.
Thus, innovation begins in the land and reaches the bottle, combining tradition, research, and respect for the environment to bring to the table an extra virgin olive oil that preserves the authenticity of the past and the vision of the future.
